Golden breakfast rolls

How to make these yummy breakfast rolls

These rolls are wonderfully simple to make. The whole process doesn’t take nearly as much time as most yeasted bakes usually do. There’s no need for a long rising time – just a little rest after shaping helps them puff up nicely and take on a more regular, rounded shape.
For me, they’re the perfect alternative when I haven’t baked my usual sourdough loaf.

Makes about 8 rolls

Ingredients:

  •  400 g all-purpose flour  
  • 7 g instant dry yeast (1 packet)  
  • 1 tsp salt  
  • 1 tsp runny honey  (if your honey is thick or crystallised, gently dissolve it in the warm milk)
  • 250 ml lukewarm milk  
  • 50 g melted butter  
  • 1 egg (for the dough)  
  • (Optional) 1 egg for brushing the tops  


Instructions:

  1. In a large bowl, mix together the flour, yeast, and salt.  
  2. Add the warm milk, honey, melted butter, and egg. Stir with a spoon or your hand, then knead for about 3–5 minutes until the dough is soft and comes together. It doesn’t need to be perfectly smooth — just nicely combined.  
  3. The dough will be a bit sticky, so transfer it onto a floured surface. Gently stretch it out into a round shape, like a pizza base, then divide it into 8 equal pieces.  
  4. Shape each piece into a roll and place them on a baking tray lined with parchment paper. Cover with a clean kitchen towel and let them rest for 20–30 minutes so they can relax and puff up slightly.  
  5. In the meantime, feel free to tidy up, sip your coffee… whatever brings you joy :).  Now’s a good time to preheat the oven to 180°C with fan.  
  6. Brush the tops with beaten egg and, using a sharp knife, make a shallow cross-cut on top of each roll.  
  7. Bake for 20–25 minutes, until golden and beautifully risen.  

These rolls taste absolutely delicious while still slightly warm — especially with a bit of butter and your favourite jam. They also pair wonderfully with savoury toppings, as they’re not too sweet.
And the smell that fills the house? Pure coziness.
